Chocolate Covered Strawberry Brownies

If you love chocolate covered strawberries (and really who doesn’t?) then this is the recipe for you. Brownies with dark chocolate frosting topped with a chocolate covered strawberry YUM! I make them in cupcake form so they can be served individually and they look really pretty and impressive even though they are easy to make.


  • 1 box brownie mix
  • vegetable oil
  • 1 egg
  • dark chocolate frosting


  • About a dozen ripe strawberries
  • Semisweet chocolate chips
  • Butter
  • Milk
  • Powdered sugar

The brownies are pretty straight forward you just follow the directions on the box. You can make them from scratch, but this type of brownie has so much going on top that it really isn’t necessary. Be sure to follow the instructions for ‘fudge-like’ brownies (one egg) for moist dense brownies. First you combine the brownie mix, egg, oil, and water.

Mix together until smooth, there should be no lumps.

Pour the batter into lined cupcake tins and bake at 350 degrees for about 25 minutes or until firm with a crackled looking top.

While the brownies are in the oven I usually make the strawberries. You just melt together chocolate chips with a little bit of butter and a tiny splash of milk to keep it from thickening. Use a mug, its the ideal shape for dipping. I usually microwave it for 35-40 seconds stirring every fifteen seconds. Once the chocolate is smooth dip the strawberries in and then place them on a plate covered in waxed paper. Once all of the berries are coated put them in the fridge to make the chocolate harden. You might want to make a few extra because you will obviously want to taste one (or three…whatever, no judgment).

Once the brownies are done allow them to cool before removing them from the tray. Next, pipe the frosting on using a pastry bag. If you don’t have a pastry bag you can spread it on the good ol’ fashioned way but the piping looks so pretty!

Place the chocolate covered strawberries on top like so…

Finally, sprinkle the brownies with a little powdered sugar for a nice contrast to all the dark chocolate. Refrigerate until serving.
