PF Changs-Style Chicken Lettuce Wraps

4 Nov

Do any of you love PF Changs? I sure do. It might even be my all time favorite restaurant chain. The appetizers in particular are amazing, my Mom and I often have girls nights that consist of happy hour apps and drinks. Our favorite is the Chicken Lettuce Wraps, so I figured out how to make them at home. Let me tell you- they taste just as delicious at home.

Chicken Lettuce Wraps:

  • 3-4 chicken breasts
  • 6-8 mushrooms
  • 2 cans water chestnuts
  • 2 Tbsp minced garlic
  • 1/4 cup soy sauce
  • 1/4 cup honey bbq sauce
  • 3 Tbsp spicy brown mustard
  • Dash crushed red pepper
  • Iceberg Lettuce

The first step to making lettuce wraps is to chop your ingredients. Cut the chicken into small pieces- the smaller the better. Also dice the mushrooms and water chestnuts. There should be close to equal parts of all 3 ingredients.

Next, make the sauce using soy sauce, honey bbq, mustard, and crushed red pepper. If you prefer your food spicy feel free to add more mustard and/or red pepper. I usually do the chopping and make the sauce the night before so it has a chance to marinate. Pour the sauce over your ingredients and mix together until everything is coated in sauce. Add garlic.

The next day (or immediately after) prepare your lettuce. Peel back each layer of lettuce and try not to tear it. This is actually harder than it sounds- I’m still not sure how Chang’s manages to get such perfect lettuce cups. Realistically slightly torn lettuce works perfectly fine, it’s just a matter of presentation.

Now, it’s time to cook your chicken mixture. Add a small amount of oil to a large pan and set to medium heat. Add chicken mixture and let it cook for 10-15 minutes or until the chicken lightens and the sauce bubbles.

Finally, when the chicken is done put the lettuce and chicken on a large plate or tray. Serve with a side of the same sauce the chicken was cooked in and grab a napkin- you’re going to need it.
