Valentines Candy #2- Caramel Pecan Clusters

Candy #2 for Melissa’s big V-day bash are called Caramel Pecan Clusters. They are very easy to make and quite tasty. I chose to use pecans because they are my favorite but you could easily substitute any other unsalted nut (cashews, walnuts, macadamia nuts, etc).

Caramel Pecan Clusters

The first step in making these is the ever annoying task of unwrapping the caramels (sigh). Once that is over with lay the caramels on a greased baking sheet or Silpat. Be sure to leave a fair amount of space in between them because they will spread as they melt.

Bake at 300 degrees for eight minutes or until they start to spread. Do not over cook or the caramel will start to crystallize around the edges. As soon as they are melted remove the tray from the oven and immediately press pecans into the melted caramel.

Next microwave the chocolate chips for about a minute and a half, stirring every thirty seconds. When the chocolate is smooth use a spoon to swirl the melted chocolate on top of the pecans.

YUM. Allow the chocolate and caramel to cool before serving in paper candy cups.

Oh, and if you are a coconut fan you might want to sprinkle a little toasted coconut on top. Coconut seems to be one of those love it or hate it things, so I only added it to a few. I personally love coconut and adding it to these candies made them reminiscent of Samoa Girl Scout cookies (which I have yet to buy!). Anyway hope enjoy them with or without the coconut.
